Everything began in 1941, when Manolo Martínez and Juliana Gil opened Bar Martinez in "31 de Agosto" street.
After 15 years working with his family, their child, Jose Ignacio, decided to take on a joint venture with his wife Amaia. Amaia herself, had been working in the wellknown Asador Trapos located directly across from Bar Martínez.
In 1984 Ganbara opened it´s doors.
From the beginning Jose Ignacio began passionatly developing the family tradition. As he introduce several innovations which have become iconic to all people of Donostia.
Amaia overseas the kitchen where quality ia a standard and all products are deeply rooted in basque tradition.
In 1998, Nagore, the couple´s daughter, became part of the team giving way to a third generation commited to the Donostia tradition of top quality "pintxos".
